Apple-Cinnamon Waffle Stack

Ingredients:

  • 2 waffles
  • 1/2 apple, thinly sliced
  • 1/3 cup applesauce
  • 1 tablespoon milk
  • Cinnamon and a tiny pinch of salt

Instructions:

  1. Place the apple in a small saucepan with 2 tablespoons water, cinnamon, and a tiny pinch of salt.
  2. Cover and cook over medium-low heat for 5 to 7 minutes, until tender but not mushy.
  3. Stir the milk into the applesauce and warm gently.
  4. Toast the waffles, stack them with the warm apples between the layers, and spoon the applesauce over the top.

Good for: A breakfast that still feels light and fruity enough for summer.

Optional: Add a spoonful of yogurt or a little strawberry preserve.
