Baked Tilapia Marinara with Ricotta & Penne

Ingredients:

  • 1 tilapia fillet, 5 to 6 ounces
  • 1 cup cooked penne
  • 1/2 cup marinara sauce
  • 2 tablespoons ricotta cheese
  • 1 teaspoon oil

Instructions:

  1. Heat the oven to 400°F. Lightly oil a small baking dish and place the tilapia in the center. Season with oregano, garlic powder, black pepper, and a small amount of salt.
  2. Spoon about half the marinara over the fish and bake until the tilapia reaches at least 145°F and flakes easily with a fork, usually about 10 to 15 minutes depending on thickness.
  3. Warm the cooked penne with the remaining marinara until hot.
  4. Serve the tilapia over or beside the penne and add ricotta in small spoonfuls over the pasta.

Good for: A comforting Italian-inspired fish dinner with tomato sauce, creamy ricotta, and penne.

Optional: Add sautéed mushrooms or onion to the marinara.
