Beef & Black Bean Enchiladas with Homemade Sauce

Uses: ground beef, black beans, tortillas, diced tomatoes, garlic, onion, cheese

Ingredients:

  • 3 ounces ground beef
  • 1/4 cup black beans
  • 2 flour tortillas
  • 1/2 cup diced tomatoes
  • 1 garlic clove and 1 tablespoon onion, minced
  • 1/4 cup shredded cheese

Instructions:

  1. Cook onion and garlic until fragrant; add tomatoes, cumin, chili powder, oregano, and 1/4 cup water, then simmer and mash into a sauce.
  2. Brown beef to 160°F and stir in black beans and two spoonfuls of sauce. Season to taste.
  3. Fill and roll tortillas, then place seam-side down in a small baking dish.
  4. Cover with sauce and cheese and bake at 375°F for 15 minutes.

Good for: A satisfying enchilada dinner with a homemade tomato sauce and hearty filling.

Optional: Use ground chicken instead of beef.
