Black Bean & Sweet Potato Tostada Bake

Uses: tostadas, sweet potato, beans, green chilies with diced tomatoes, cheddar

Ingredients:

  • 2 tostada shells, broken into large pieces
  • 1/2 cup cooked diced sweet potato
  • 1/2 cup drained beans
  • 1/2 cup green chilies with diced tomatoes
  • 1/3 cup shredded cheddar

Instructions:

  1. Heat the oven to 375°F.
  2. Season cooked sweet potato and beans with cumin, paprika, pepper, and a small amount of salt.
  3. Layer tostada pieces, sweet potato, beans, and the green chili-tomato mixture in a small baking dish.
  4. Top with cheddar and bake until hot and bubbling, about 12 to 15 minutes.

Good for: A fun vegetarian casserole that combines the flavors of nachos, tostadas, and sweet potato chili.

Optional: Top with yogurt, lime cabbage, or diced cucumber after baking.
