Cheddar-Stuffed Burger with Tomato-Mushroom Skillet

Ingredients:

  • 1 beef burger patty, about 4 ounces
  • 3 tablespoons shredded cheddar
  • 1/2 cup sliced mushrooms
  • 1 plum tomato, chopped
  • 2 tablespoons sliced red onion
  • 1 burger bun
  • 1 teaspoon oil

Instructions:

  1. Cook the burger until nearly done, then top with cheddar, cover, and continue cooking until the center reaches 160°F.
  2. In a separate skillet, cook mushrooms and onion in oil until browned.
  3. Add tomato, oregano, black pepper, and a small amount of salt; cook for 2 minutes.
  4. Serve the cheeseburger on the bun with the warm tomato-mushroom mixture spooned over or alongside it.

Good for: A hearty burger dinner with a savory vegetable topping that feels more complete than a plain sandwich.

Optional: Add green chilies or lime slaw.
