Cheesy Turkey & Pepper Tortilla Melt

Uses: ground turkey, tortilla, bell pepper, onion, cheddar, picante sauce

Ingredients:

  • 3 ounces ground turkey
  • 1 tortilla
  • 1/4 bell pepper, diced
  • 2 tablespoons diced Spanish onion
  • 3 tablespoons shredded cheddar
  • 1 tablespoon picante sauce
  • 1 teaspoon oil

Instructions:

  1. Cook ground turkey in oil with bell pepper and onion, breaking the meat into small crumbles. Season with cumin, garlic powder, black pepper, and a small amount of salt.
  2. Continue cooking until the turkey reaches 165°F and the vegetables are tender.
  3. Place the tortilla in a clean skillet, sprinkle cheddar over one half, and spoon the turkey mixture over the cheese.
  4. Add picante sauce, fold the tortilla, and cook 1 to 2 minutes per side until crisp and melted.

Good for: A warm, approachable quesadilla-style lunch with seasoned turkey and vegetables.

Optional: Add guacamole or shredded cabbage after cooking.
