Cheesy Turkey-Stuffed Peppers with Yellow Rice

Ingredients:

  • 4 ounces ground turkey
  • 1 bell pepper, halved and seeded
  • 1/2 cup cooked yellow rice
  • 1/3 cup diced tomato
  • 1/4 cup shredded cheddar
  • 1 teaspoon oil

Instructions:

  1. Heat the oven to 375°F and place the pepper halves cut-side up in a small baking dish.
  2. Cook ground turkey in oil with cumin, garlic powder, black pepper, and a small amount of salt until it reaches 165°F.
  3. Mix the cooked turkey with cooked yellow rice and tomato, then spoon the mixture into the pepper halves.
  4. Top with cheddar and bake for 12 to 15 minutes, until the pepper is tender and the filling is steaming hot.

Good for: A colorful stuffed-pepper dinner with seasoned turkey, rice, tomato, and melted cheese.

Optional: Serve with picante sauce or guacamole.
