Cheesy Turkey-Stuffed Peppers with Yellow Rice
Uses: ground turkey, bell pepper, yellow rice, tomato, cheddar
Ingredients:
- 4 ounces ground turkey
- 1 bell pepper, halved and seeded
- 1/2 cup cooked yellow rice
- 1/3 cup diced tomato
- 1/4 cup shredded cheddar
- 1 teaspoon oil
Instructions:
- Heat the oven to 375°F and place the pepper halves cut-side up in a small baking dish.
- Cook ground turkey in oil with cumin, garlic powder, black pepper, and a small amount of salt until it reaches 165°F.
- Mix the cooked turkey with cooked yellow rice and tomato, then spoon the mixture into the pepper halves.
- Top with cheddar and bake for 12 to 15 minutes, until the pepper is tender and the filling is steaming hot.
Good for: A colorful stuffed-pepper dinner with seasoned turkey, rice, tomato, and melted cheese.
Optional: Serve with picante sauce or guacamole.
