Crispy Potato, Ham & Avocado Breakfast Hash

Uses: red bliss potatoes, ham, avocado, grape tomatoes

Ingredients:

  • 1 cup red bliss potatoes, cut into 1/2-inch pieces
  • 2 ounces sliced ham, chopped
  • 1/4 avocado, diced
  • 1/4 cup grape tomatoes, halved
  • 1 teaspoon oil

Instructions:

  1. Parboil the potatoes in lightly salted water for 6 to 8 minutes, until just beginning to soften, then drain well.
  2. Heat oil in a skillet over medium-high heat. Add the potatoes and cook for 6 to 8 minutes, turning occasionally, until golden and crisp at the edges. Season with cumin, paprika, black pepper, and a small amount of salt.
  3. Add the chopped ham and tomatoes and cook for 2 minutes, just until the ham is hot and the tomatoes soften slightly.
  4. Transfer to a bowl and top with diced avocado just before serving.

Good for: A hearty Latin-inspired breakfast hash with crisp potatoes, savory ham, creamy avocado, and tomato.

Optional: Top with sliced hard-boiled egg or a squeeze of lemon.
