Garlic-Herb Tilapia with Snap Peas & Mushrooms

Ingredients:

  • 1 tilapia fillet, 5 to 6 ounces
  • 3/4 cup sugar snap peas, trimmed
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced Vidalia onion
  • 2 teaspoons oil, divided

Instructions:

  1. Pat the tilapia dry and season with garlic powder, oregano, black pepper, and a small amount of salt.
  2. Heat 1 teaspoon oil in a skillet over medium-high heat. Add mushrooms and onion and cook for 3 minutes. Add snap peas, season with a tiny pinch of salt, and cook for another 2 to 3 minutes so they stay crisp. Transfer the vegetables to a plate.
  3. Add the remaining oil to the skillet and cook the tilapia until opaque, flaky, and at least 145°F, turning once if needed.
  4. Serve the fish with the warm vegetables alongside.

Good for: A light, colorful fish dinner with crisp snap peas, earthy mushrooms, and sweet onion.

Optional: Finish with vinegar or serve over a small portion of penne.
