Ground Beef & Corn Quesadilla

Uses: ground beef, corn, flour tortilla, cheese, tomato

Ingredients:

  • 3 ounces ground beef
  • 1/3 cup corn kernels
  • 1 flour tortilla
  • 1/4 cup shredded cheese
  • 2 tablespoons diced tomato

Instructions:

  1. Brown the beef until it reaches 160°F, then drain excess fat if needed.
  2. Stir in corn, cumin, and chili powder and cook for 2 minutes. Season with salt and pepper to taste.
  3. Spread the filling and cheese over half of a warm tortilla, fold, and press gently.
  4. Cook until golden on both sides; serve with fresh tomato.

Good for: A satisfying quesadilla with seasoned beef, sweet corn, and melted cheese.

Optional: Use ground chicken instead of beef.
