Homemade Chicken Enchiladas

Uses: ground chicken, flour tortillas, diced tomatoes, onion, garlic, cheese

Ingredients:

  • 3 ounces ground chicken
  • 2 small flour tortillas
  • 1/2 cup diced tomatoes
  • 1 tablespoon diced onion
  • 1 small garlic clove, minced
  • 1/4 cup shredded cheese

Instructions:

  1. Cook onion and garlic until fragrant, add diced tomatoes, salt, cumin, coriander, chili powder, oregano, and 1/4 cup water, then simmer 8 minutes and mash into a sauce.
  2. Brown ground chicken until 165°F, lightly seasoned with salt and pepper and stir in a spoonful of the sauce.
  3. Fill tortillas with chicken, roll, and place seam-side down in a small baking dish.
  4. Cover with sauce and cheese; bake at 375°F for 12 to 15 minutes until hot and bubbling.

Good for: A manageable homemade enchilada lunch with a simple tomato sauce made from the box.

Optional: Add black beans or corn to the filling.
