Latin Black Bean, Avocado & Tomato Breakfast Tacos

Uses: corn tortillas, black beans, avocado, grape tomatoes, lime

Ingredients:

  • 2 corn tortillas
  • 1/2 cup black beans, rinsed and drained
  • 1/4 avocado, sliced or mashed
  • 1/3 cup grape tomatoes, halved
  • 1 lime wedge
  • 1 teaspoon oil

Instructions:

  1. Warm the tortillas in a dry skillet for 20 to 30 seconds per side, then wrap them in a clean towel to keep warm.
  2. Heat the oil in the skillet. Add the black beans, season with cumin, garlic powder, black pepper, and a small amount of salt, and cook for 2 to 3 minutes with a splash of water.
  3. Divide the warm beans between the tortillas. Add avocado and grape tomatoes, then squeeze lime over the top.
  4. Fold the tortillas gently and serve immediately while the beans are warm and the vegetables are fresh.

Good for: A colorful Latin-inspired breakfast with creamy avocado, seasoned beans, juicy tomatoes, and bright lime.

Optional: Add a thin strip of American cheese to each tortilla while the beans are hot.
