Orange-Cucumber Black Bean Salad

Ingredients:

  • 1/2 cup black beans, rinsed and drained
  • 1/2 orange, peeled and chopped
  • 1/3 cup diced cucumber
  • 1/3 cup diced tomato
  • 1/2 cup shredded cabbage
  • 1 teaspoon lemon juice
  • 1 teaspoon oil

Instructions:

  1. Place beans, orange, cucumber, tomato, and cabbage in a bowl.
  2. Whisk lemon juice and oil with cumin, black pepper, and a small amount of salt.
  3. Pour over the salad and toss gently.
  4. Let stand for 5 minutes before serving so the flavors blend.

Good for: A cool, colorful plant-forward lunch with citrus, beans, and plenty of crunch.

Optional: Serve with a warm tortilla or add cheddar.
