Warm Marinara White Bean Bowl with Ricotta
Uses: cannellini beans, marinara sauce, plum tomato, ricotta cheese, romaine
Ingredients:
- 3/4 cup cannellini beans, rinsed and drained
- 1/2 cup marinara sauce
- 1/3 cup diced plum tomato
- 2 tablespoons ricotta cheese
- 1 cup chopped romaine
- 1 teaspoon oil
Instructions:
- Heat oil in a small skillet and add the beans. Season with oregano, garlic powder, black pepper, and a small amount of salt and cook for 2 minutes.
- Add marinara and tomato and simmer for 4 to 5 minutes until hot and slightly thickened.
- Spoon the warm bean mixture into a bowl and add ricotta in small spoonfuls over the top.
- Serve the chopped romaine alongside or underneath the warm beans so some leaves soften while others remain crisp.
Good for: A simple meatless lunch bowl with tomatoey beans, creamy ricotta, and fresh romaine.
Optional: Serve with half a toasted burger bun or add cooked penne.
