Warm Marinara White Bean Bowl with Ricotta

Ingredients:

  • 3/4 cup cannellini beans, rinsed and drained
  • 1/2 cup marinara sauce
  • 1/3 cup diced plum tomato
  • 2 tablespoons ricotta cheese
  • 1 cup chopped romaine
  • 1 teaspoon oil

Instructions:

  1. Heat oil in a small skillet and add the beans. Season with oregano, garlic powder, black pepper, and a small amount of salt and cook for 2 minutes.
  2. Add marinara and tomato and simmer for 4 to 5 minutes until hot and slightly thickened.
  3. Spoon the warm bean mixture into a bowl and add ricotta in small spoonfuls over the top.
  4. Serve the chopped romaine alongside or underneath the warm beans so some leaves soften while others remain crisp.

Good for: A simple meatless lunch bowl with tomatoey beans, creamy ricotta, and fresh romaine.

Optional: Serve with half a toasted burger bun or add cooked penne.
