Beef, Mushroom & Tomato Fusilli

Uses: ground beef, fusilli, tomato sauce, mushrooms, red onion
Yield: Approximately 1 serving

Ingredients:

  • 3 to 4 ounces ground beef
  • 1 cup gnocchi
  • 1/2 cup tomato sauce
  • 1/2 cup sliced mushrooms
  • 1 tablespoon diced red onion

Instructions:

  1. Cook the gnocchi according to the package instructions and set aside.
  2. In a skillet, cook the ground beef with mushrooms and red onion until the beef is fully cooked and the vegetables are softened. Season as it cooks with your favorite spices.
  3. Add the tomato sauce and simmer for 3 to 5 minutes, letting the sauce warm through and pick up flavor from the beef and mushrooms.
  4. Spoon the beef and tomato sauce over the gnocchi, or stir everything together for a warm pasta-style bowl.

Good for: A hearty, familiar dinner with the feel of a pasta bowl, but made with tender gnocchi.

Optional: Add shredded cheddar on top for a richer, cheesier bowl.
