  • 4 ounces ground beef
  • 3/4 cup cooked brown rice
  • 1/3 cup finely diced carrots
  • 1/3 cup grape tomatoes, chopped
  • 1/4 cup tomato sauce
  • 1 teaspoon oil
  • Cumin, oregano, paprika, garlic powder, black pepper
  • Small amount of salt

Instructions:

  1. Heat oil in a skillet over medium-high heat. Add ground beef and break it into small crumbles.
  2. When the beef is about halfway cooked, add carrots. Season with cumin, oregano, paprika, garlic powder, black pepper, and a small amount of salt.
  3. Add chopped tomatoes, tomato sauce, and 2 tablespoons water. Simmer for 5 to 7 minutes until the beef is fully cooked and the carrots are tender.
  4. Spoon the picadillo-style beef over warm brown rice and serve.

Good for: A cozy Latin-inspired dinner with saucy seasoned beef, vegetables, and nutty brown rice.

Optional: Top with diced avocado or a small spoonful of sour cream.
