Ingredients:

  • 1 beef burger patty, thawed if package directions allow crumbling
  • 1/2 cup diced sweet potato
  • 1/3 cup diced red pepper
  • 2 tablespoons diced red onion
  • 1/4 cup tomato sauce
  • 1 teaspoon oil
  • Cumin, oregano, paprika, garlic powder, black pepper
  • Small amount of salt

Instructions:

  1. Partially cook the diced sweet potato in the microwave with 1 tablespoon water for 3 to 4 minutes, until almost tender.
  2. Heat oil in a skillet. Crumble the beef into the pan and cook according to package directions, breaking it into small pieces as it cooks.
  3. Add red pepper, red onion, and sweet potato. Season with cumin, oregano, paprika, garlic powder, black pepper, and a small amount of salt. Cook until the vegetables are tender and the beef is fully cooked.
  4. Stir in tomato sauce and 2 tablespoons water. Simmer for 2 to 3 minutes and serve hot.

Good for: A cozy Latin-inspired skillet with savory beef, sweet potato, peppers, and tomato.

Optional: Serve over a tostada or top with shredded cheese.
