Cabbage Cheddar Egg Skillet
Uses: cabbage, red onion, eggs, shredded cheddar, margarine
Ingredients:
- 1 cup thinly sliced cabbage
- 1 tablespoon diced red onion
- 1 teaspoon margarine
- 1 to 2 eggs
- 2 tablespoons shredded cheddar
Instructions:
- Melt margarine in a pan over medium heat. Add cabbage and red onion and cook 4 to 6 minutes, until the cabbage softens and becomes mild.
- Season as it cooks with black pepper, garlic powder, paprika, or another favorite seasoning.
- Add beaten eggs and scramble everything together, or cook the vegetables first and serve a fried egg on top.
- Finish with cheddar while the skillet is still warm.
Why it works: Cabbage becomes tender and slightly sweet when cooked, making it a surprisingly good breakfast vegetable.
Optional: Serve with toast, or add a small splash of vinegar to the cabbage before adding the eggs.
