Cabbage Cheddar Egg Skillet

Uses: cabbage, red onion, eggs, shredded cheddar, margarine

Ingredients:

  • 1 cup thinly sliced cabbage
  • 1 tablespoon diced red onion
  • 1 teaspoon margarine
  • 1 to 2 eggs
  • 2 tablespoons shredded cheddar

Instructions:

  1. Melt margarine in a pan over medium heat. Add cabbage and red onion and cook 4 to 6 minutes, until the cabbage softens and becomes mild.
  2. Season as it cooks with black pepper, garlic powder, paprika, or another favorite seasoning.
  3. Add beaten eggs and scramble everything together, or cook the vegetables first and serve a fried egg on top.
  4. Finish with cheddar while the skillet is still warm.

Why it works: Cabbage becomes tender and slightly sweet when cooked, making it a surprisingly good breakfast vegetable.

Optional: Serve with toast, or add a small splash of vinegar to the cabbage before adding the eggs.
