Ingredients:

  • 1 small arepa
  • 3 ounces cooked chicken breast, sliced or shredded
  • 1/2 tomato, diced
  • 1 tablespoon finely diced Spanish onion
  • 1 teaspoon finely diced jalapeño, seeds removed
  • 1 teaspoon vinegar
  • Black pepper
  • Small amount of salt

Instructions:

  1. Warm the arepa according to package directions until hot and lightly crisp.
  2. In a small bowl, combine tomato, onion, jalapeño, vinegar, black pepper, and a small amount of salt. Let stand for 5 minutes so the flavors blend.
  3. Warm the chicken gently in a skillet with 1 tablespoon water and a pinch of cumin or paprika.
  4. Split the arepa to make a pocket. Fill with warm chicken and spoon the fresh tomato-onion salsa inside.

Good for: A bright Latin-inspired lunch with warm chicken and a fresh, lightly spicy salsa tucked into an arepa.

Optional: Add shredded cheese inside the warm arepa before the chicken.
