Chicken, Beet & Orange Couscous Salad

Ingredients:

  • 4 ounces cooked chicken, sliced
  • 1/2 cup cooked couscous
  • 1/4 cup sliced beets
  • 1/2 orange, chopped
  • 1 cup chopped romaine
  • 1 tablespoon feta cheese
  • Olive oil if available, as needed

Instructions:

  1. Cook chicken if needed: season with garlic powder, oregano, black pepper, lemon juice, and a little oil, then roast or pan-cook until it reaches 165°F. Rest and slice.
  2. Cook couscous and fluff with a fork. Let it cool slightly.
  3. Chop romaine and orange. Drain and chop beets if the slices are large.
  4. In a bowl, layer romaine, couscous, beets, orange, chicken, and feta.
  5. Finish with olive oil, lemon juice, black pepper, and oregano.
  6. Serve room temperature for a refreshing dinner salad.

Good for: A colorful sweet-savory dinner salad with chicken, citrus, beets, feta, and couscous.
