Chicken Cheddar Open-Faced Toast

Uses: wheat bread, chicken breast, shredded cheddar, tomato, ranch

Ingredients:

  • 1 to 2 slices wheat bread
  • 1 tablespoon ranch
  • 3 ounces cooked chicken, sliced
  • 2 slices tomato
  • 2 tablespoons shredded cheddar

Instructions:

  1. Cook the chicken by roasting, pan-searing, boiling, or sauteing it with your favorite seasonings until fully cooked, then slice.
  2. Toast the bread until lightly crisp.
  3. Spread ranch over the toast.
  4. Add sliced chicken and tomato, then sprinkle cheddar over the top.
  5. Warm in a toaster oven, oven, pan, or microwave until the cheddar melts.
  6. Add lettuce after warming, if desired.

Good for: A quick open-faced lunch that feels like a warm sandwich without much extra work.

Optional: Add a small spoonful of tomato sauce before the cheddar for a pizza-toast style version.
