Chicken Drumstick Picnic Salad

Uses: cooked chicken drumstick, iceberg lettuce, cucumber, tomato, nectarine

Ingredients:

  • 1 cooked chicken drumstick, meat pulled from bone
  • 1 to 2 cups chopped iceberg lettuce
  • 1/4 cucumber, diced
  • 1/2 plum tomato, diced
  • 1/2 nectarine, diced
  • 1 teaspoon vinegar or oil, if available

Instructions:

  1. Season the chicken drumstick with salt, pepper, garlic powder, onion powder, Italian seasoning, or any spices you have at home.
  2. Cook the drumstick in the oven at 400°F for about 30 to 40 minutes, or in a covered pan over medium heat, turning occasionally, until it is fully cooked and reaches an internal temperature of 165°F. Let it cool slightly.
  3. Pull the meat from the bone and shred or cut into bite-size pieces.
  4. Chop lettuce, cucumber, tomato, and nectarine.
  5. Toss the vegetables and fruit with a tiny splash of vinegar or oil, black pepper, and oregano.
  6. Top with chicken and serve cool or room temperature.

Good for: A summery chicken salad with sweet fruit, crisp lettuce, and juicy tomato.

Optional: Serve with toasted wheat bread or pasta shells if you want it heartier.
