Chicken Marinara with Pasta Shells

Uses: chicken drumsticks, pasta shells, marinara sauce, mushrooms, Vidalia onion

Ingredients:

  • 2 chicken drumsticks
  • 3/4 cup cooked pasta shells
  • 1/2 cup marinara sauce
  • 1/4 cup sliced mushrooms
  • 1 tablespoon diced Vidalia onion
  • 1 teaspoon oil or margarine, if available

Instructions:

  1. Heat oven to 400°F.
  2. Season chicken drumsticks with garlic powder, onion powder, oregano, black pepper, and a little oil or margarine if available.
  3. Roast chicken for 35 to 45 minutes, turning once, until browned and 165°F.
  4. While chicken cooks, boil pasta shells until tender and drain.
  5. Cook onion and mushrooms in a small pan, then add marinara sauce and simmer for 3 to 5 minutes. Adjust the seasonings as needed.
  6. Serve the chicken with pasta shells and spoon mushroom marinara over the top.

Good for: A classic Italian-style chicken dinner with red sauce and pasta.

Optional: Add a spoonful of ricotta on the pasta for a creamy finish.
