Chicken, Mushroom & Rice Skillet

Ingredients:

  • 3 to 4 ounces chicken breast, diced or sliced
  • 3/4 cup cooked rice
  • 1/2 cup sliced mushrooms
  • 1 tablespoon diced red onion
  • 1 cup shredded cabbage

Instructions:

  1. Cook the chicken in a skillet by pan-searing or sauteing it with your favorite seasonings until fully cooked.
  2. Add mushrooms, red onion, and cabbage to the pan. Cook until the vegetables soften and the cabbage becomes tender.
  3. Stir in the cooked rice and warm everything together, letting the rice pick up the flavor from the chicken and vegetables.
  4. Taste and adjust with a little more seasoning, a small splash of vinegar or lemon juice, or a light drizzle of ranch if desired.

Good for: A simple one-pan dinner that feels warm, balanced, and satisfying.

Optional: Top with shredded cheddar for a more comforting skillet.
