Chicken, Mushroom & Rice Skillet
Uses: chicken breast, cooked rice, mushrooms, red onion, cabbage
Ingredients:
- 3 to 4 ounces chicken breast, diced or sliced
- 3/4 cup cooked rice
- 1/2 cup sliced mushrooms
- 1 tablespoon diced red onion
- 1 cup shredded cabbage
Instructions:
- Cook the chicken in a skillet by pan-searing or sauteing it with your favorite seasonings until fully cooked.
- Add mushrooms, red onion, and cabbage to the pan. Cook until the vegetables soften and the cabbage becomes tender.
- Stir in the cooked rice and warm everything together, letting the rice pick up the flavor from the chicken and vegetables.
- Taste and adjust with a little more seasoning, a small splash of vinegar or lemon juice, or a light drizzle of ranch if desired.
Good for: A simple one-pan dinner that feels warm, balanced, and satisfying.
Optional: Top with shredded cheddar for a more comforting skillet.
