Uses: pancake mix, apple, milk, honey
Yield: 1 Serving
Print recipe

Ingredients:

  • 1/3 cup pancake mix
  • Milk, according to pancake-mix directions, about 1/4 cup
  • 1/2 apple, thinly sliced or finely diced
  • 1 teaspoon honey
  • 1/4 teaspoon cinnamon
  • Tiny pinch of salt
  • 1 teaspoon oil for the pan

Instructions:

  1. Prepare the pancake batter with the pancake mix and milk according to the package directions. Stir only until the dry mix is moistened.
  2. Place the apple in a small skillet with 1 tablespoon water, cinnamon, honey, and a tiny pinch of salt. Cook over medium heat for 3 to 4 minutes, stirring, until the apple begins to soften but still holds its shape. Transfer to a bowl.
  3. Wipe the skillet if needed, add a very light coating of oil, and cook 2 to 3 small pancakes over medium heat. Flip when bubbles form on the surface and the edges look set.
  4. Stack the warm pancakes and spoon the cinnamon-honey apples over the top. Serve immediately.

Good for: A cozy first-cool-morning breakfast with familiar pancake flavor and warm autumn apples.

Optional: Add a little orange zest to the apples if you want a brighter citrus note.
