Corn & Guacamole Beef Tostada-Style Dinner

Ingredients:

  • 1 tortilla
  • 5 ounces ground beef
  • 1/3 cup corn kernels
  • 1 tablespoon guacamole
  • 2 tablespoons shredded cheddar
  • 1 tablespoon picante sauce

Instructions:

  1. Toast the tortilla in a dry pan over medium heat until it becomes lightly golden and firm enough to hold toppings. Flip once or twice so it warms evenly. If you prefer something softer, leave the tortilla flexible and eat this as a taco instead.
  2. In the same pan, cook the ground beef over medium heat, breaking it into small crumbles as it browns. Cook until fully done and no pink remains.
  3. Season the beef with coriander, cumin, chili powder, garlic powder, paprika, black pepper, and a small pinch of salt if available. Add a spoonful of picante sauce and a tiny splash of water, then let it simmer for 1 to 2 minutes so the beef becomes juicy, saucy, and taco flavored.
  4. Remove the beef from the pan or push it to one side. Add the corn kernels to the warm pan and cook for 2 to 3 minutes, stirring occasionally, until the corn is hot, sweet, and lightly browned in spots. Season with a little black pepper, paprika, or chili powder if you want extra flavor.
  5. Spread guacamole over the toasted tortilla as the creamy base.
  6. Top with the seasoned beef, warm corn, cheddar, and picante sauce.
  7. Serve right away while the tortilla still has a little crunch, the beef is warm and saucy, and the corn tastes sweet and summery.
