Cornish Hen Taco Salad

Ingredients:

  • 3 to 4 ounces cooked Cornish hen, shredded
  • 1 to 2 cups chopped kale
  • 1/4 cup chopped tomato
  • 1/4 cup sliced cucumber
  • 1 tablespoon picante sauce
  • 1 tablespoon guacamole

Instructions:

  1. Season the Cornish hen with a little oil, salt, pepper, cumin, paprika, and garlic powder. Cook in the oven, air fryer, or covered skillet until fully cooked and the meat is tender. Let it rest for a few minutes, so it is easier to handle.
  2. Remove cooked Cornish hen meat from the bone and shred it into bite-size pieces.
  3. Season the meat with cumin, paprika, garlic powder, and a small spoonful of picante sauce.
  4. Massage chopped kale with a tiny bit of oil, vinegar, or citrus juice so it softens.
  5. Top the kale with chicken, tomato, and cucumber.
  6. Add guacamole as a creamy dressing and spoon picante sauce over the top.

Good for: A fresh taco-salad style lunch that feels light but still satisfying.

Optional: Add tortilla strips by toasting and slicing part of a tortilla.
