Cornish Hen with Summer Corn & Pepper Rice

Ingredients:

  • 1/2 cooked Cornish hen, or 4 to 5 ounces meat
  • 1/2 cup cooked yellow rice
  • 1/3 cup corn kernels
  • 1/4 cup diced bell pepper
  • 1 tablespoon diced onion
  • 1 teaspoon oil or butter, if available

Instructions:

  1. Season the Cornish hen with a little oil, salt, pepper, garlic powder, paprika, and cumin. Cook in the oven, air fryer, or covered skillet until fully cooked and the meat is tender. Let it rest for a few minutes, so it is easier to handle.
  2. Remove the cooked Cornish hen meat from the bone and shred it into bite-size pieces.
  3. In a pan, cook onion and bell pepper until fragrant and soft.
  4. Add corn and yellow rice, seasoning with garlic powder, cumin, paprika, and black pepper.
  5. Spoon the corn-pepper rice onto a plate and place the Cornish hen over the top.
  6. Finish with picante sauce or a little citrus juice if available.

Why it works: The yellow rice makes the plate feel festive, while corn and peppers keep it summery.

Optional: Add cheddar over the rice or guacamole on the side.
