Ingredients:

  • 1 hash brown patty
  • 1/3 to 1/2 cup liquid egg whites
  • 1 teaspoon margarine or oil, if available
  • Black pepper, garlic powder, onion powder, or Italian seasoning, if available

Instructions:

  1. Cook the hash brown according to package directions, or warm it in a pan until golden and crispy on both sides. If using a pan, add a little margarine or oil to help it brown nicely.
  2. While the hash brown cooks, dice or slice the plum tomato. Season it with a little black pepper and Italian seasoning if available.
  3. In a separate pan, cook the egg whites gently with a little margarine or oil, seasoning to taste, until just set.
  4. Place the crispy hash brown on a plate.
  5. Spoon the egg whites alongside or over the hash brown.
  6. Add the tomato on top or on the side for a fresh, juicy bite.
  7. Serve warm while the hash brown is still crisp.

Good for: A warm, simple breakfast with a crispy potato base, soft egg whites, and fresh tomato to keep it light.

Optional: Add a slice of cheese on top while the egg whites are still warm for a melty breakfast plate.
