Fusilli Tomato Lunch Bowl
Uses: fusilli, tomato sauce, mushrooms, red onion, shredded cheddar
Ingredients:
- 1 cup gnocchi
- 1/2 cup tomato sauce
- 1/2 cup sliced mushrooms
- 1 tablespoon diced red onion
- 2 tablespoons shredded cheddar
Instructions:
- Cook the gnocchi according to package instructions and drain.
- In a pan, sauté red onion and mushrooms with a little margarine or oil, if available, until soft and lightly browned.
- Season with salt, pepper, and any favorite spices as the vegetables cook.
- Add tomato sauce to the pan and warm through. Taste and adjust seasoning.
- Spoon the sauce over the gnocchi and top with shredded cheddar.
Good for: A warm, comforting lunch that feels like a simple pasta bowl.
Optional: Add cooked chicken or ground beef for a protein-rich meal.
