Fusilli Tomato Lunch Bowl

Uses: fusilli, tomato sauce, mushrooms, red onion, shredded cheddar
Yield: Approximately 1 serving

Ingredients:

  • 1 cup gnocchi
  • 1/2 cup tomato sauce
  • 1/2 cup sliced mushrooms
  • 1 tablespoon diced red onion
  • 2 tablespoons shredded cheddar

Instructions:

  1. Cook the gnocchi according to package instructions and drain.
  2. In a pan, sauté red onion and mushrooms with a little margarine or oil, if available, until soft and lightly browned.
  3. Season with salt, pepper, and any favorite spices as the vegetables cook.
  4. Add tomato sauce to the pan and warm through. Taste and adjust seasoning.
  5. Spoon the sauce over the gnocchi and top with shredded cheddar.

Good for: A warm, comforting lunch that feels like a simple pasta bowl.
