Ground Beef Taco Rice Bowl
Uses: ground beef, yellow rice, kidney beans, cheddar, picante sauce, guacamole
Ingredients:
- 5 ounces ground beef
- 1/2 cup cooked yellow rice
- 1/4 cup kidney beans, drained and rinsed
- 2 tablespoons shredded cheddar
- 1 tablespoon picante sauce
- 1 tablespoon guacamole
Instructions:
- Cook the yellow rice according to package instructions, then set aside and keep warm.
- Cook the ground beef in a pan, breaking it into small pieces as it browns.
- Season with cumin, chili powder, garlic powder, paprika, black pepper, and a small pinch of salt if available.
- Warm the yellow rice and kidney beans together in a bowl.
- Spoon the seasoned beef over the rice and beans, then sprinkle with cheddar.
- Finish with picante sauce and guacamole so the bowl feels creamy, saucy, and bright.
Good for: A classic taco-bowl style lunch that is filling, colorful, and easy to build.
Optional: Add chopped cucumber, tomato, or bell pepper for fresh crunch.
