Ingredients:

  • 2 ounces smoked ham steak, diced
  • 1/2 small Idaho potato, diced
  • 1/3 apple, diced
  • 1/3 cup liquid egg whites
  • 1 teaspoon oil
  • Black pepper and paprika
  • Small amount of salt

Instructions:

  1. Partially cook the potato in the microwave with 1 tablespoon water for about 3 minutes, until nearly tender.
  2. Heat oil in a skillet over medium-high heat. Add the potato and ham and cook until the potato begins to brown and the ham is hot.
  3. Add the apple and cook for 1 to 2 minutes, just until slightly softened. Season with black pepper, paprika, and a small amount of salt if needed.
  4. Pour in the egg whites and stir gently until set. Serve immediately.

Good for: A sweet-savory autumn breakfast with smoky ham, potatoes, and just enough apple for seasonal flavor.

Optional: Add a tiny pinch of cinnamon to the apple for a stronger sweet-and-savory contrast.
