Hummus Chicken Vegetable Bowl

Uses: chicken breast, hummus, rice, cucumber, tomato, lettuce, cabbage

Ingredients:

  • 3 ounces cooked chicken
  • 3 tablespoons hummus
  • 3/4 cup cooked rice or 1 cup lettuce
  • 1/4 cup cucumber
  • 1/4 cup tomato
  • 1/2 cup shredded cabbage

Instructions:

  1. Cook the chicken by roasting, pan-searing, or sauteing it with your favorite seasonings until fully cooked, then slice or dice it.
  2. Choose rice for a heartier bowl, or lettuce for a lighter salad-style bowl.
  3. Add the chicken, cucumber, tomato, and cabbage on top.
  4. Spoon hummus over the bowl or serve it on the side as a creamy sauce.
  5. Mix lightly before eating, or enjoy each ingredient separately.
