Hummus Chicken Vegetable Bowl
Uses: chicken breast, hummus, rice, cucumber, tomato, lettuce, cabbage
Ingredients:
- 3 ounces cooked chicken
- 3 tablespoons hummus
- 3/4 cup cooked rice or 1 cup lettuce
- 1/4 cup cucumber
- 1/4 cup tomato
- 1/2 cup shredded cabbage
Instructions:
- Cook the chicken by roasting, pan-searing, or sauteing it with your favorite seasonings until fully cooked, then slice or dice it.
- Choose rice for a heartier bowl, or lettuce for a lighter salad-style bowl.
- Add the chicken, cucumber, tomato, and cabbage on top.
- Spoon hummus over the bowl or serve it on the side as a creamy sauce.
- Mix lightly before eating, or enjoy each ingredient separately.

Optional: Serve with toast on the side, or add a small squeeze of lemon juice or splash of vinegar to brighten the vegetables.
