Hummus & Egg Breakfast Toast
Uses: wheat bread, hummus, egg, tomato, cucumber
Ingredients:
- 1 to 2 slices wheat bread
- 2 tablespoons hummus
- 1 boiled, scrambled, or fried egg
- 2 slices tomato
- 1/4 cup sliced cucumber
Instructions:
- Toast the bread until warm and lightly crisp.
- Spread hummus over the toast.
- Top with a cooked egg, then add tomato and cucumber on top or serve the vegetables on the side.
- If desired, sprinkle the tomato and cucumber with a little salt and black pepper to bring out their flavor.
Good for: A fresh, savory breakfast that feels light but still has protein.
Optional: Skip the egg for a no-cook vegetarian toast, or add a squeeze of lemon if available.
