Hummus Vegetable Sandwich
Uses: wheat bread, hummus, cucumber, tomato, lettuce, red onion
Ingredients:
- 2 slices wheat bread
- 3 tablespoons hummus
- 1/4 cup sliced cucumber
- 2 slices tomato
- 1 lettuce leaf
- 1 teaspoon thinly sliced red onion
Instructions:
- Spread hummus generously over the bread.
- Layer cucumber, tomato, lettuce, and a small amount of red onion over the hummus.
- Season the vegetables lightly with black pepper or your favorite seasoning, if desired.
- Close the sandwich and serve, or enjoy it open-faced for a lighter lunch.
Chef Tip: No cooking needed. This is a fresh, easy lunch for days when you want something simple.
Optional: Add turkey if you would like extra protein.
