Hummus Vegetable Sandwich

Uses: wheat bread, hummus, cucumber, tomato, lettuce, red onion

Ingredients:

  • 2 slices wheat bread
  • 3 tablespoons hummus
  • 1/4 cup sliced cucumber
  • 2 slices tomato
  • 1 lettuce leaf
  • 1 teaspoon thinly sliced red onion

Instructions:

  1. Spread hummus generously over the bread.
  2. Layer cucumber, tomato, lettuce, and a small amount of red onion over the hummus.
  3. Season the vegetables lightly with black pepper or your favorite seasoning, if desired.
  4. Close the sandwich and serve, or enjoy it open-faced for a lighter lunch.
