Kidney Bean, Kale & Cheddar Rice Bowl

Ingredients:

  • 1/2 cup cooked yellow rice
  • 1/3 cup kidney beans
  • 1 cup chopped kale
  • 2 tablespoons shredded cheddar
  • 1 tablespoon picante sauce

Instructions:

  1. Cook the yellow rice according to package instructions, then set aside and keep warm.
  2. Warm the kidney beans in a small pan with a splash of water. Season with cumin, garlic powder, paprika, black pepper, and a small pinch of salt if available.
  3. Add the chopped kale to the pan with the beans. Cook for 2 to 3 minutes, stirring gently, until the kale softens and turns a deeper green. Add another tiny splash of water if the pan looks dry.
  4. Spoon the warm yellow rice into a bowl and top with the seasoned beans and kale.
  5. Sprinkle cheddar over the hot rice, beans, and kale so it softens and melts into the bowl.
  6. Finish with picante sauce for a saucy, colorful topping that brings everything together.
