Ingredients:

  • 1 tilapia fillet, 5 to 6 ounces
  • 1 small Idaho potato, cut into 3/4-inch pieces
  • 1 cup broccoli florets
  • 2 teaspoons oil, divided
  • 1 lemon wedge
  • Paprika, garlic powder, black pepper
  • Small amount of salt

Instructions:

  1. Heat the oven to 425°F. Toss potato pieces with 1 teaspoon oil, paprika, garlic powder, black pepper, and a small amount of salt. Roast for 15 minutes.
  2. Add broccoli to the pan with the remaining oil and a little seasoning. Stir the potatoes and roast for another 8 minutes.
  3. Pat the tilapia dry, season lightly with paprika, garlic powder, black pepper, and a small amount of salt, and place it on the pan. Roast for 8 to 12 minutes, depending on thickness, until opaque and flaky.
  4. Squeeze lemon over the fish and vegetables just before serving.

Good for: An easy sheet-pan fish dinner with crisp potatoes and roasted green vegetables.

Optional: Add thin carrot slices to the pan with the potatoes.
