Loaded Beef Taco Stuffed Peppers
Uses: ground beef, bell pepper, kidney beans, yellow rice, cheddar, picante sauce
Ingredients:
- 1 bell pepper, halved if possible
- 5 ounces ground beef
- 1/4 cup kidney beans, drained and rinsed
- 1/4 cup cooked yellow rice
- 2 tablespoons shredded cheddar
- 1 tablespoon picante sauce
Instructions:
- Cook the yellow rice according to package instructions, then set aside.
- Cut the bell pepper in half and remove seeds. If it is easier, chop the pepper and make this as a bowl instead.
- Cook the ground beef in a pan, breaking it into small pieces as it browns, and season with taco-style spices such as cumin, chili powder, garlic powder, paprika, black pepper, and a small pinch of salt if available.
- Stir in kidney beans, rice, and picante sauce.
- Spoon the mixture into the pepper halves and top with cheddar.
- Bake, microwave, or cover in a pan until the pepper softens and the cheese melts.
Good for: A colorful dinner that feels special but uses simple box ingredients.
Optional: Top with guacamole or chopped tomato before serving.
