Loaded Sweet Potato with Beef & Cheddar

Uses: sweet potato, ground beef, shredded cheddar, tomato, cabbage

Ingredients:

  • 1 medium sweet potato
  • 3 ounces ground beef
  • 2 tablespoons shredded cheddar
  • 1/4 cup diced tomato
  • 1/2 cup shredded cabbage

Instructions:

  1. Bake or microwave the sweet potato until it is soft and tender.
  2. While the sweet potato cooks, cook the ground beef in a skillet until fully cooked. Season with your favorite spices.
  3. Split the sweet potato open and gently mash the inside with a fork.
  4. Spoon the cooked beef over the sweet potato, then add diced tomato, cabbage, and cheddar.
  5. Warm briefly if needed so the cheddar begins to melt.
