Loaded Sweet Potato with Beef & Cheddar
Uses: sweet potato, ground beef, shredded cheddar, tomato, cabbage
Ingredients:
- 1 medium sweet potato
- 3 ounces ground beef
- 2 tablespoons shredded cheddar
- 1/4 cup diced tomato
- 1/2 cup shredded cabbage
Instructions:
- Bake or microwave the sweet potato until it is soft and tender.
- While the sweet potato cooks, cook the ground beef in a skillet until fully cooked. Season with your favorite spices.
- Split the sweet potato open and gently mash the inside with a fork.
- Spoon the cooked beef over the sweet potato, then add diced tomato, cabbage, and cheddar.
- Warm briefly if needed so the cheddar begins to melt.
Why it works: The sweet potato becomes the base for a full dinner, with the beef, cheddar, tomato, and cabbage adding protein, creaminess, freshness, and crunch.
Optional: Add a small spoonful of ranch on top, or serve the cabbage on the side as a quick slaw.
