Loaded Sweet Potato with Turkey, Cheddar & Cabbage Slaw
Uses: sweet potato, turkey slices, shredded cheddar, cabbage, ranch
Ingredients:
- 1 small sweet potato
- 2 to 3 slices turkey
- 2 tablespoons shredded cheddar
- 1 cup shredded cabbage
- 1 tablespoon ranch
Instructions:
- Cook the sweet potato in the microwave or oven until soft and tender.
- While the sweet potato cooks, toss the shredded cabbage with ranch to make a quick, creamy slaw.
- Slice the sweet potato open and gently mash the inside with a fork.
- Top with turkey and shredded cheddar.
- Warm briefly until the turkey is heated through and the cheddar begins to melt.
- Serve with the cabbage slaw on the side, or spoon a little over the top for crunch.

Optional: Use cooked seasoned ground beef instead of turkey.
