Loaded Sweet Potato with Turkey, Cheddar & Cabbage Slaw

Ingredients:

  • 1 small sweet potato
  • 2 to 3 slices turkey
  • 2 tablespoons shredded cheddar
  • 1 cup shredded cabbage
  • 1 tablespoon ranch

Instructions:

  1. Cook the sweet potato in the microwave or oven until soft and tender.
  2. While the sweet potato cooks, toss the shredded cabbage with ranch to make a quick, creamy slaw.
  3. Slice the sweet potato open and gently mash the inside with a fork.
  4. Top with turkey and shredded cheddar.
  5. Warm briefly until the turkey is heated through and the cheddar begins to melt.
  6. Serve with the cabbage slaw on the side, or spoon a little over the top for crunch.
