Meatball Couscous Bowl

Uses: meatballs, couscous, feta, tzatziki sauce, tomatoes, romaine
Yield: 1 serving

Ingredients:

  • 4 to 5 meatballs
  • 1/2 cup cooked couscous
  • 1/4 cup grape tomatoes, chopped
  • 1/2 cup chopped romaine
  • 2 tablespoons tzatziki sauce
  • 1 tablespoon feta cheese

Instructions:

  1. Heat meatballs in a covered pan with a splash of water or canned tomatoes until hot all the way through and 165°F in the center.
  2. Cook couscous according to package instructions and fluff with a fork.
  3. Spoon couscous into a wide bowl.
  4. Add chopped romaine and tomatoes around the couscous.
  5. Place hot meatballs on top, then drizzle or dollop tzatziki sauce over them.
  6. Sprinkle with feta and black pepper.

Why it works: It has the fun loaded-bowl feeling of nachos, but with fresh bowl flavors instead of chips.

Optional: Add olives, lemon, or toasted whole wheat bread cubes for crunch.
