Meatball Couscous Bowl
Uses: meatballs, couscous, feta, tzatziki sauce, tomatoes, romaine
Ingredients:
- 4 to 5 meatballs
- 1/2 cup cooked couscous
- 1/4 cup grape tomatoes, chopped
- 1/2 cup chopped romaine
- 2 tablespoons tzatziki sauce
- 1 tablespoon feta cheese
Instructions:
- Heat meatballs in a covered pan with a splash of water or canned tomatoes until hot all the way through and 165°F in the center.
- Cook couscous according to package instructions and fluff with a fork.
- Spoon couscous into a wide bowl.
- Add chopped romaine and tomatoes around the couscous.
- Place hot meatballs on top, then drizzle or dollop tzatziki sauce over them.
- Sprinkle with feta and black pepper.
Why it works: It has the fun loaded-bowl feeling of nachos, but with fresh bowl flavors instead of chips.
Optional: Add olives, lemon, or toasted whole wheat bread cubes for crunch.
