Ingredients:

  • 3 to 4 prepared meatballs, about 4 ounces
  • 1/3 cup diced tomatoes, drained if very liquid
  • 1 flour tortilla
  • 1/4 cup shredded taco-blend cheese
  • Oregano and black pepper
  • Tiny amount of salt if needed

Instructions:

  1. Heat the meatballs according to package directions until steaming hot. Cut them into halves or quarters.
  2. Warm the diced tomatoes in a small skillet with oregano and black pepper for 2 to 3 minutes. Taste before adding salt because the meatballs and cheese may already be salty.
  3. Place the tortilla in a clean skillet over medium heat. Sprinkle half the cheese over one side, add the meatballs and tomato mixture, then top with the remaining cheese.
  4. Fold the tortilla over and cook for 2 to 3 minutes per side until crisp and the cheese has melted. Let stand briefly before cutting into wedges.

Good for: A fun, pizza-like lunch that turns prepared meatballs into a crispy, melty tortilla meal.

Optional: Add a small amount of diced jalapeño to the tomato mixture.
