Mushroom Cheddar Scramble
Uses: eggs, mushrooms, red onion, shredded cheddar, margarine
Ingredients:
- 2 eggs
- 1/2 cup sliced mushrooms
- 1 tablespoon diced red onion
- 1 teaspoon margarine
- 2 tablespoons shredded cheddar
Instructions:
- Melt margarine in a pan over medium heat. Add mushrooms and red onion, season lightly, and cook until the vegetables are soft.
- Beat the eggs in a bowl with a pinch of seasoning, if desired.
- Pour the eggs into the pan and gently stir until softly scrambled and cooked through.
- Sprinkle cheddar over the eggs at the end so it melts into the scramble.
Simple and familiar: An easy way to make scrambled eggs feel warmer and more complete.
Optional: Serve with toast, fruit, or a small spoonful of applesauce on the side.
