Mushroom Cheddar Scramble

Uses: eggs, mushrooms, red onion, shredded cheddar, margarine

Ingredients:

  • 2 eggs
  • 1/2 cup sliced mushrooms
  • 1 tablespoon diced red onion
  • 1 teaspoon margarine
  • 2 tablespoons shredded cheddar

Instructions:

  1. Melt margarine in a pan over medium heat. Add mushrooms and red onion, season lightly, and cook until the vegetables are soft.
  2. Beat the eggs in a bowl with a pinch of seasoning, if desired.
  3. Pour the eggs into the pan and gently stir until softly scrambled and cooked through.
  4. Sprinkle cheddar over the eggs at the end so it melts into the scramble.
