Mushroom Cheddar Toast
Uses: wheat bread, mushrooms, red onion, shredded cheddar, margarine
Ingredients:
- 1 to 2 slices wheat bread
- 1/2 cup sliced mushrooms
- 1 tablespoon diced red onion
- 1 teaspoon margarine
- 2 tablespoons shredded cheddar
Instructions:
- Melt margarine in a pan over medium heat. Add mushrooms and red onion and cook until soft and lightly browned.
- Season with a little black pepper and any favorite spice blend as the mushrooms cook.
- Spoon the warm mushroom mixture over toast.
- Sprinkle with cheddar and warm briefly until the cheese melts.

Optional: Add a cooked egg on top for a more filling breakfast.
