Mushroom Cheddar Toast

Ingredients:

  • 1 to 2 slices wheat bread
  • 1/2 cup sliced mushrooms
  • 1 tablespoon diced red onion
  • 1 teaspoon margarine
  • 2 tablespoons shredded cheddar

Instructions:

  1. Melt margarine in a pan over medium heat. Add mushrooms and red onion and cook until soft and lightly browned.
  2. Season with a little black pepper and any favorite spice blend as the mushrooms cook.
  3. Spoon the warm mushroom mixture over toast.
  4. Sprinkle with cheddar and warm briefly until the cheese melts.
