Nectarine, Kale & Cornish Hen Summer Wrap

Ingredients:

  • 1 tortilla
  • 3 ounces cooked Cornish hen, shredded
  • 1/2 nectarine, thinly sliced
  • 1/2 cup thinly sliced kale
  • 1/4 cup cucumber strips
  • 1 tablespoon guacamole

Instructions:

  1. Season the Cornish hen with a little oil, salt, pepper, garlic powder, paprika, and cumin. Cook in the oven, air fryer, or covered skillet until fully cooked and the meat is tender. Let it rest for a few minutes, so it is easier to handle.
  2. Remove the cooked Cornish hen meat from the bone and shred it into bite-size pieces.
  3. Warm the tortilla and let it cool slightly.
  4. Spread guacamole down the center.
  5. Layer shredded Cornish hen, nectarine slices, kale, and cucumber.
  6. Season with black pepper and a tiny squeeze of orange juice or vinegar if available.
  7. Roll gently into a wrap, keeping the fruit tucked inside so each bite is sweet, savory, and fresh.
