Pasta Shells with Chicken, Tomato & Snap Peas

Uses: pasta shells, chicken drumstick meat, tomato, sugar snap peas

Ingredients:

  • 3/4 cup cooked pasta shells
  • 1 cooked chicken drumstick, meat pulled from bone
  • 1/2 plum tomato, diced
  • 1/3 cup sugar snap peas, sliced
  • 2 tablespoons marinara sauce or oil, optional

Instructions:

  1. Season the chicken drumstick with salt, pepper, garlic powder, onion powder, Italian seasoning, or any spices you have at home. Cook it in a 400°F oven for about 30 to 40 minutes, or in a covered pan over medium heat, turning occasionally, until the chicken is fully cooked and reaches an internal temperature of 165°F.
  2. Let it rest for 5 minutes so the juices settle, then pull the meat from the bone into bite-size pieces.
  3. Cook the pasta shells according to package instructions until tender, then drain well.
  4. Slice sugar snap peas thinly so they are easy to eat.
  5. Warm pasta with chicken, tomato, snap peas, and marinara sauce or a small drizzle of oil.
  6. Season with oregano, black pepper, and garlic powder.

Good for: A simple pasta dinner with chicken, tomato, and bright green crunch.

Optional: Add ricotta if you want a creamier pasta.
