Pasta Shells with Sancocho Marinara

Uses: pasta shells, vegetarian sancocho stew, marinara sauce

Ingredients:

  • 3/4 cup cooked pasta shells
  • 1/2 cup vegetarian sancocho stew
  • 1/4 cup marinara sauce
  • 1 tablespoon diced Vidalia onion, optional
  • Italian seasoning and black pepper, optional

Instructions:

  1. Cook the pasta shells according to package instructions until tender, then drain well.
  2. Warm the sancocho stew in a small pot.
  3. Stir in marinara sauce to give it an Italian red-sauce flavor. Add some oregano and a splash or balsamic vinegar if available.
  4. Add cooked pasta shells and simmer for 1 to 2 minutes so the shells soak up the sauce.
  5. Serve warm with black pepper and Italian seasoning.

Good for: A hearty vegetarian pasta lunch that uses the bean-and-vegetable stew in a familiar way.

Optional: Top with ricotta or sliced cheese if available.
