Picante Beef Lettuce-Style Kale Cups

Uses: ground beef, kale, tomato, cucumber, picante sauce
Yield: 1 serving

Ingredients:

  • 5 ounces ground beef
  • 4 to 6 large kale leaves or 1 cup chopped kale
  • 1/4 cup chopped tomato
  • 1/4 cup cucumber matchsticks
  • 1 tablespoon picante sauce

Instructions:

  1. Cook ground beef until browned and season with taco-style spices.
  2. If using large kale leaves, trim the thick stems and warm the leaves briefly so they are easier to fold. If using chopped kale, use it as a bowl base instead.
  3. Spoon beef into the kale leaves or over chopped kale.
  4. Top with tomato, cucumber, and picante sauce.
  5. Eat as hand-held cups or as a fresh taco bowl.

Why it works: It gives taco flavor with lots of freshness and crunch from the summer vegetables.

Optional: Add cheddar or guacamole for a richer version.
