Ingredients:

  • 1 small red bliss potato, scrubbed and diced
  • 1/4 cup diced Spanish onion
  • 1/3 cup whole liquid eggs
  • 1 teaspoon oil
  • Paprika and black pepper
  • Small amount of salt

Instructions:

  1. Place the diced potato in a microwave-safe bowl with 1 tablespoon water. Cover loosely and microwave for 3 to 4 minutes, until nearly tender. Drain any remaining water.
  2. Heat oil in a skillet over medium-high heat. Add the potato and onion, season with paprika, black pepper, and a small amount of salt, and cook for 4 to 5 minutes until the potato edges are browned and the onion is soft.
  3. Reduce the heat to medium and pour in the eggs. Stir gently so the eggs move through the potato mixture.
  4. Cook until the eggs are fully set, taste for seasoning, and serve hot.

Good for: A classic, hearty breakfast skillet that feels especially right as mornings start getting cooler.

Optional: Add fresh corn kernels during the last 2 minutes of cooking.
