Sheet Pan Chicken with Sweet Potato & Mushrooms

Uses: chicken breast, sweet potato, mushrooms, red onion, margarine
Yield: Approximately 1 serving

Ingredients:

  • 3 to 4 ounces chicken breast
  • 1 small sweet potato, diced
  • 1/2 cup mushrooms
  • 2 tablespoons sliced red onion
  • 1 to 2 teaspoons margarine

Instructions:

  1. Cut the sweet potato into small pieces so it cooks more quickly and evenly.
  2. Place the sweet potato, chicken, mushrooms, and red onion on a small sheet pan or in a baking dish.
  3. Dot with margarine and season with your favorite spices, such as garlic powder, onion powder, paprika, black pepper, or dried herbs.
  4. Bake until the chicken is fully cooked and the sweet potato is tender. If the vegetables finish before the chicken, remove them from the pan and continue cooking the chicken until done.
  5. Serve everything together as a warm roasted dinner.

Good for: A simple oven dinner with roasted flavor, tender vegetables, and very little cleanup.

Optional: Serve with cucumber tomato salad or a little ranch on the side.
